This pork filling can be made way ahead of time to shorten the preparation time for empanadas. Use with recipe for Empanada dough. This can be a great source of income too for the family.
1/2 kg minced pork
Salt and pepper
1 onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
250g frozen peas and carrots
1 box (42.g) raisins
1 small potato, diced
1. Brown pork in a non-stick skillet. Sprinkle salt and pepper to taste.
2. In another skillet, saute garlic and onion in olive oil until onion is translucent. Add browned pork to the onion and garlic. Mix thoroughly and cook 5 minutes.
3. Add peas and carrots, raisins and potatoes. Simmer 10 minutes or until vegetables are done.
